Avocado and Tomato Salad

Ingredients
  • 2 ripe diced avocado
  • 3 ripe local tomatoes
  • ½ cup chopped cilantro
  • Juice from 2 limes or to taste
  • Salt and pepper to taste

Instructions
  1. Cut tomatoes in half and remove seeds and pulp.
  2. Dice tomatoes and avocado.
  3. Mix all ingredients together.
  4. Chill for an hour and enjoy!

Ingredients:

  • 1 cup basil chopped
  • 1 cup arugula chopped
  • 1/2 cup diced fresh mozzarella
  • 1/2 cup cherry tomatoes (halved)
  • 1 avocado diced
  • Salt and pepper to taste

Dressing Ingredients:

  • 1/3 cup of olive oil
  • 1/4 cup balsamic vinegar
  • 1 tsp sugar
  • Blend until well mixed.

Directions:

  • Prepare veggies (exclude avocado) and cheese.
  • Add to salad mixing bowl and toss with dressing.
  • Garnish with avocado.

Southwestern Quinoa and Black Beans

Ingredients
  • 1 cup uncooked quinoa
  • 1 cup black beans
  • ½ cup diced scallions
  • 1 large tomato diced
  • ½ cup chopped cilantro
  • ½ jalapeno diced (optional)
  • 1 tbsp fresh lime juice
  • 1 tbsp cumin or to taste
  • salt and pepper to taste

Instructions
  1. Cook quinoa according to directions and cool.
  2. While quinoa is cooking prepare veggies.
  3. Add beans, veggies, spices, and lime juice. Mix well.
  4. Add salt and pepper to taste.
  5. Add more cumin or lime juice, if needed.
