Southwestern Quinoa and Black Beans

Ingredients
  • 1 cup uncooked quinoa
  • 1 cup black beans
  • ½ cup diced scallions
  • 1 large tomato diced
  • ½ cup chopped cilantro
  • ½ jalapeno diced (optional)
  • 1 tbsp fresh lime juice
  • 1 tbsp cumin or to taste
  • salt and pepper to taste

Instructions
  1. Cook quinoa according to directions and cool.
  2. While quinoa is cooking prepare veggies.
  3. Add beans, veggies, spices, and lime juice. Mix well.
  4. Add salt and pepper to taste.
  5. Add more cumin or lime juice, if needed.

Fresh Strawberry and Arugula Salad

Ingredients
  • 3 cups garden fresh arugula
  • 1 cup sliced strawberries
  • ½ cup of diced goat or Ricotta Salata cheese
  • ¼ cup crushed strawberries
  • 1 tsp brown sugar
  • 2 tbsp balsamic vinegar
  • ¼ cup olive oil
  • salt dressing to tast

Instructions
  1. Crush up to ¼ cup of strawberries.
  2. Add brown sugar and vinegar to the strawberries and rest for 15-20 minutes while periodically mixing.
  3. Slice ½ cup strawberries and set aside.
  4. Wash arugula and place in mixing bowl.
  5. Add sliced strawberries and cheese.
  6. Add olive oil to dressing and mix.
  7. Salt dressing to taste.
  8. Toss salad in dressing and enjoy!

 

I was given the opportunity to taste/review Beanfields Bean and Rice Chips.  They claim- “quite possibly the world’s tastiest chips”.  To be honest, I have to agree.  I fell in love with the first bite and had to make a yummy summer salad to accompany this tasty treat.

The chips are not only great tasting but healthy.  They are also non-GMO verified using farmed and made in the USA ingredients.  As a Dietitian, I like them because they have 4 g of fiber per 1 oz serving. If anyone knows me, my fiber rule is at least 3 g of fiber/ounce.  As a mother, I love their producst because they are “allergy friendly” in regards to the 8 common food allergens.  They are also gluten free and corn free!  To learn more about their flavors, click here.

Raw Kale, White Bean and Corn Summer Salad with Beanfields Bean and Rice Chips!

Ingredients
  • 1 cup raw kale salad (1.5 cups finely chopped kale leaves massaged with 1 tbsp olive oil and ¼ tsp salt or to taste for 2 minutes)
  • 1 cup great northern white beans
  • ½ cup fresh corn
  • ½ cup cilantro
  • ¼ cup parsley
  • ½ cherry tomatoes halved
  • ½ cup scallion onions diced
  • 1 tbsp cumin
  • ½ diced jalapeno pepper (optional but highly recommended)
  • Salt and pepper to taste

Instructions
  1. Prepare veggies and toss with spices.
  2. Serve with your favorite flavor of Beanfields Chips
  3. Enjoy!
