Figs and feta are a great combination of sweet and salty.  When complemented with a homemade balsamic and honey dressing the taste is enhanced giving your taste buds a party of their own!

 

Ingredients:

  • 3 cups of your favorite salad mix (I like field greens with spinach)
  • 1/4 cup diced scallions
  • 1/2 cup dried figs diced- about 8 figs
  • 1/4-1/2 cup plain feta cheese crumbled (too taste)
  • One diced ripe avocado

Dressing:

  • 1/2 cup olive oil
  • 1/4 cup of balsamic vinegar
  • 2 tbsp local honey

Whisk salad dressing ingredients very well and set aside.  You can store in a glass jar with a lid.

Assemble your salad and toss gently dressing (amount optional).

Enjoy!

  3. I think that sounds unusual but wonderful. I freeze and dry figs every summer from our tree so this will be a good recipe to use for some.

      Ya, you are nice but really it is my job! I am a dietitian who loves to eat good food. I just document what I do for my family as I do it. It is my way of leaving my legacy to my children- our family recipes and traditions!
