Ceviche Bean Salad
•1 thinly sliced medium red onion
•1 diced medium cucumber
•2 diced medium tomatoes
•¼ cup chopped cilantro
•1 cup white beans (cooked and drained) or frozen
•1 chopped avocado
•2 limes squeezed
•Salt and pepper to taste
Combine onions, cucumbers, tomatoes and cilantro in a medium-sized bowl. Mix in beans, avocado and lime juice.  Add salt and pepper to taste.
