Green Beans and Potatoes with Vidalia Onion and Bacon

It is a classic recipe and is made with fresh green beans, bacon, new potatoes, onion, broth and butter, this savory side dish will satisfy any eater.

 

Ingredients:

1 ½  cups chicken broth, low-sodium

1 Vidalia onion

½  teaspoon pepper, black, divided

500g fresh green beans

500 g small potatoes

2 tablespoons cubed butter

2 teaspoons garlic salt, divided

5 slices bacon

 

Preparation:

Remove the ends from the green beans. Halve the potatoes.

Cook the bacon until it crisps in a large pot over medium heat. Remove it and place on paper towels and let it cool. You can leave bacon fat in the pot.

Dice onion and add it to the fat and fry for 3 minutes until it softens.

Add chicken stock, green beans, ¼  teaspoon black pepper, 1 teaspoon of garlic, salt. Stir everything properly. Simmer, cover and cook for 30-35 minutes.

Uncover and sprinkle with garlic salt over beans. Put halved potatoes over the green beans. Sprinkle with garlic salt once more and add pepper over top. Cover again and simmer for another half an hour until potatoes are tender.

Stir again to incorporate. Crumble the bacon that is cooked and sprinkle over top. Serve warm. Bon appetite!
