Crushed Potato and Kale Cakes

These little cakes make a perfect side dish to any meal and a great Baby Led Weaning recipe.  I hope you enjoy them as much as we do!

Crushed Potato and Kale Cakes

Serves: 4-6
 

Ingredients
  • 1 lb Yukon Gold potatoes
  • 1 cup diced sweet onion
  • 4 gloves garlic minced
  • ½ cup mascarpone cheese
  • ¾ cup fresh kale leaves
  • Salt to taste
  • ½ tbsp olive oil (1 for kale)
  • 2 tbsp pastured butter (split)

Instructions
  1. Wash and remove the stems from the kale.
  2. Finely chop the kale leaves.
  3. Massage kale leaves with olive oil and a dash of salt for two minutes. Set aside.
  4. Boil potatoes and cool.
  5. While potatoes are boiling, saute onion in pastured butter until translucent.
  6. Add garlic and kale to onion and cook for 2 minutes.
  7. Crush or break up potatoes in a large mixing bowl when they are cool enough to handle.
  8. Add veggie mixture and cheese to potatoes.
  9. Add salt to taste.
  10. Mix mixture and make into 2 inch patties. The patties can be made approximately 4 hours prior to cooking. Just prep and store in the cooler.
  11. Pan fry patties in a skillet until golden brown using the remaining pastured butter.

  5. I made these for dinner yesterday…well, made them as much as I ever follow a recipe…but you were my inspiration 8o), and served them with grilled lamb chops. Even my picky teen and tween, to claim NOT to like kale, ate them. I had one for breakfast with scrambled eggs this morning. YUM!
