Are you having a hard time finding a perfect avocado?  If you do not know what you are looking for in an avocado, it can be disastrous for your recipe!  I love to make homemade guacamole from scratch and the perfect avocado is essential!  Sometimes they can be hard or have air pockets!  When shopping I usually buy my avocados about 3-5 days prior to use and let them sit on my counter.  A ripe avocado should be soft to touch but without air pockets.  The air pockets will cause your avocado to turn brown and mushy on the inside.  A hard avocado will be watery and stringy.  It should turn from green to a purple-black color.  Again, you want a soft but slightly firm fruit before preparation time!  To speed up ripening, store in a brown paper bag on the counter.
How do you cut an avocado?  Easy.  Slice into the pit long ways until you can twist it into two pieces.  Then put your knife into the pit and twist it out.  Then you can slice it or even dice it in the peel.
Uses for an avocado:
  • mash into a baby food puree  (recipes below
  • slice for sandwiches (a great substitute for mayo)
  • slice and eat with scrambled egg
  • dice into a salad before you toss with Italian dressing (great substitution for a creamy dressing)
  • dice for a topping on tacos or any Mexican food

Baby Food Recipes:

Avocado Solo!

Just mash up and serve.  It is a great first food for baby.
You may need to add breast milk or formula to thin.

Avocado Tropics

1 tablespoon avacodo
1/4 banana mashed
1/2 teaspoon flaxseed meal
Nutritional Enhancer (recommend coconut oil)
Mix until smooth.  You may need to add breast milk or formula to thin.

Avocado Dip

1/2 avocado mashed
1/2 teaspoon finely ground/processed cilantro
dash of cumin
Nutritional Enhancer (recommend wheat germ and flax oil)

Avocado Sweet Cream

1/2 avocado
1 tablespoon vanilla yogurt
1 hard boiled egg YOLK (only)
Nutritional Enhancer (recommend coconut oil)

Mix until smooth.  You may need to add breast milk or formula to thin.
