My “on the go” lunch: Spinach, Avocado, Hummus, Cucumber and Lemon Wrap.
It is quick, easy, nutrient dense and very tasty. I typically do not do a nutrient analysis on my recipes but I could not resist with this one. This wrap is packed with approximately 160 calories so eat two or three for lunch!
- 1 small tortilla (6 inch)
- 1 tbsp hummus (your favorite kind- I use original)
- 1/2 cup baby spinach
- 1/4 cup diced cucumber
- 3 thin slices of avocado
- 1 squirt of fresh lemon
- Spread hummus on tortilla and add veggies.
- Squirt a little lemon juice and wrap it up.
