Looking to change the face of pancakes?

 

 

Pancakes are a common breakfast meal in our home.   I love them because I can add flaxseed, chia seeds, blueberries, and other great stuff to them to help improve the fiber, antioxidant and omega 3 nutrition.

On this particular day, I made my version of a healthier pancake but made them thinner than normal (simply add more liquid to the batter).   I decided to use the pancake as a crepe.  Instead of syrup, I topped the pancake with whole fat vanilla yogurt and fresh dices strawberries.  We rolled them up and ate every bite.  They tasted like strawberry shortcake and are now a new addition to our mornings.
